White Chocolate Chip Cookies with Raspberry Gelato
My husband's birthday this year was the first birthday we would celebrate as a married couple. Needless to say as a new bride taking pride in my domicile I wanted everything to be perfect...especially to the food. Phil is not a big sweets guy, but there are two sweet thing I know he absolutely loves; raspberries and white chocolate. We randomly got an ice cream maker as a wedding gift and I thought perhaps I could put it to good use. So for Phil's birthday this year the dessert menu was: Warm White Chocolate Chip Cookies with Raspberry Gelato. I took a raspberry gelato recipe that came in the manual and my hubby loved it (which is all that matters). You can find it here! And the cookie recipe was right off the Toll House bag and you can find it here I even got to buy a food processor, so I kind of got my own little birthday gift.
The gelato has to sit in the fridge for 6 hours before you put it in the ice cream machine so you will want to give yourself plenty of time. I made everything days in advance, but you should be fine even if you don;t start until the day before.
If you don't have an ice cream maker you can still do this WITHOUT A MACHINE. Follow the Cuisinart recipe until you get to the point where you need to freeze the gelato, then follow the steps of David Lebovitz, found here.
I didn't add any food coloring to the gelato. I thought it had a lovely color on it's own and I wanted to preserve that.
I omitted the cocoa this year because my main feature was the gelato especially since this was my first stab at this, and even without the cocoa it was tasty. Having had it without I can tell you that you really can't go wrong by adding it though and the next occasion I make this for I am planning on it. Whatever you choose to do just be ready for all kinds of yummy.
Phil's did have one complaint though...He wasn't home to lick the cookie dough off the mixer....Poor guy!
